Mung beans are one of the most cherished foods in Ayurveda, known for their balancing and detoxifying properties.

  1. Rinse the mung beans and soak them in water for 4 hours. Drain.
  2. Heat oil in a large pot over medium heat. Add chopped onion, minced garlic, and grated ginger. Saute until onions are translucent.
  3. Add turmeric powder, cumin powder, coriander powder, and red chili powder. Stir well.
  4. Add chopped tomatoes and cook until they soften.
  5. Add chopped carrots, potatoes, and soaked mung beans. Stir well.
  6. Add water and salt. Bring to a boil, then reduce heat and simmer for 45 minutes or until the mung beans are tender.
  7. Add spinach and cook for an additional 5 minutes.
  8. Remove from heat and let it rest for 10 minutes.
  9. Stir in lemon juice before serving.
  10. Serve hot with bread or rice.
