Rinse lentils under cold water and set aside.

In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Saute until vegetables are softened.

Add tomato paste, cumin, paprika, bay leaves, salt, and black pepper. Stir well.

Add lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.

Remove bay leaves and garnish with fresh parsley.

Let the soup rest for 10 minutes before serving.
