  1. Boil water and cook the Japchae noodles according to the package instructions. Drain and rinse with cold water.
  2. Cut the atsuage into thin strips.
  3. Heat vegetable oil in a pan and fry the atsuage until golden brown. Remove from the pan and set aside.
  4. In the same pan, add more vegetable oil if needed and stir-fry the carrot, bell pepper, onion, and garlic until they are slightly softened.
  5. Add the spinach and stir-fry until wilted.
  6. Add the cooked Japchae noodles and atsuage to the pan.
  7. In a small bowl, mix together soy sauce, sesame oil, sugar, and salt. Pour the sauce over the noodles and vegetables.
  8. Stir-fry everything together until well combined and heated through.
  9. Remove from heat and sprinkle with toasted sesame seeds.
  10. Let the dish rest for 10 minutes before serving.
  11. Serve hot and enjoy!
