Boil water and cook the Japchae noodles according to the package instructions. Drain and rinse with cold water.

Cut the atsuage into thin strips.

Heat vegetable oil in a pan and fry the atsuage until golden brown. Remove from the pan and set aside.

In the same pan, add more vegetable oil if needed and stir-fry the carrot, bell pepper, onion, and garlic until they are slightly softened.

Add the spinach and stir-fry until wilted.

Add the cooked Japchae noodles and atsuage to the pan.

In a small bowl, mix together soy sauce, sesame oil, sugar, and salt. Pour the sauce over the noodles and vegetables.

Stir-fry everything together until well combined and heated through.

Remove from heat and sprinkle with toasted sesame seeds.

Let the dish rest for 10 minutes before serving.
