In a food processor, pulse almonds, cashews, walnuts, and peanuts until coarsely chopped.

In a large bowl, combine chopped nuts, pumpkin seeds, sunflower seeds, dried cranberries, dried apricots, oats, cinnamon, honey, coconut oil, and vanilla extract. Mix well.

Line a square baking dish with parchment paper. Press the nut mixture into the dish, making sure it is evenly distributed.

Refrigerate for at least 1 hour to set.

Once set, remove from the baking dish and cut into bars.
