Harvest Ratatouille
Ratatouille is a traditional French dish that originated in the region of Provence. It was originally a peasant dish made with inexpensive vegetables, but it has since become popular worldwide for its delicious flavors and versatility.

Preheat the oven to 400°F (200°C).

Slice the eggplant, zucchini, and bell peppers into 1/4-inch thick rounds.

Place the sliced vegetables on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.

Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and slightly browned.

Meanwhile, heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until they are softened and fragrant.

Add the tomatoes to the skillet and cook for another 5 minutes, until they have softened.

Remove the roasted vegetables from the oven and add them to the skillet with the tomatoes. Stir in the fresh basil leaves.

Cover the skillet and let the ratatouille simmer for 10 minutes to allow the flavors to meld together.
