  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplant, zucchini, red bell pepper, and yellow bell pepper into thin rounds.
  3. Chop the onion and mince the garlic.
  4. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
  5. Add the sliced vegetables to the skillet and sauté for 5 minutes.
  6. Transfer the sautéed vegetables to a baking dish.
  7. Pour the tomatoes over the vegetables and season with salt and black pepper.
  8. Bake in the preheated oven for 30 minutes, or until the vegetables are tender.
  9. Remove from the oven and let rest for 10 minutes.
  10. Garnish with fresh basil before serving.
