Harira is a traditional Moroccan soup often enjoyed during Ramadan to break the fast.

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.
  2. Add ground cumin, ground ginger, ground turmeric, cayenne pepper, salt, and black pepper. Stir well.
  3. Add chopped tomatoes and cook for a few minutes until they soften.
  4. Add chickpeas, lentils, and enough water to cover the ingredients. Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the chickpeas and lentils are tender.
  5. Stir in chopped cilantro and parsley. Cook for an additional 5 minutes.
  6. Squeeze lemon juice into the soup and stir well.
  7. Remove from heat and let it rest for 10 minutes.
  8. Serve hot and enjoy!
