Preheat the grill.

Slice the tofu, zucchini, eggplant, and red bell pepper into 1/4-inch thick slices.

In a small bowl, whisk together balsamic vinegar, olive oil, salt, and black pepper.

Brush the vegetables and tofu with the balsamic mixture.

Grill the vegetables and tofu for about 3-4 minutes per side, or until grill marks appear.

Remove from the grill and let them rest for 5 minutes.

Stack the grilled vegetables and tofu, alternating between the different vegetables.

Garnish with fresh mint leaves.
