  1. Preheat the grill to medium-high heat. Brush the corn with olive oil and season with salt and pepper. Grill the corn for about 10 minutes, turning occasionally, until charred and tender. Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and transfer them to a bowl. Add lime juice, cilantro, red onion, jalapeno, salt, and black pepper to the bowl. Toss everything together until well combined. Let the dressing rest for 5 minutes before serving. Serve as a side dish or drizzle over salads.
