Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.

Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.

Stir in chopped kale, lemon juice, salt, and black pepper. Cook for an additional 5 minutes.
