Great Northern beans got their name from the fact that they were originally cultivated in the northern regions of the United States.

Rinse and soak the Great Northern beans overnight.

In a large pot, heat olive oil and sauté onions, carrots, celery, and garlic until softened.

Add soaked beans, vegetable broth, bay leaves, thyme, rosemary, salt, and pepper to the pot.

Bring to a boil, then reduce heat and simmer for about 1 hour or until beans are tender.

Remove bay leaves and blend half of the soup until smooth.

Return the blended soup to the pot and stir well.

Let the soup rest for 10 minutes before serving.
