  1. Rinse the grape leaves under cold water and remove the stems.
  2. In a bowl, mix together the rice, chopped onion, chopped tomato, chopped parsley, chopped mint, olive oil, lemon juice, salt, and pepper.
  3. Place a grape leaf on a flat surface, shiny side down. Spoon a small amount of the rice mixture onto the center of the leaf.
  4. Fold the sides of the leaf over the filling and roll it up tightly.
  5. Repeat with the remaining grape leaves and filling.
  6. Place the stuffed grape leaves in a pot and pour in enough water to cover them.
  7. Place a plate on top of the grape leaves to keep them submerged.
  8. Bring the water to a boil, then reduce the heat and simmer for 1 hour.
  9. Remove the grape leaves from the pot and let them cool for 30 minutes before serving.
