  1. Preheat the oven to 400°F (200°C).
  2. Trim and peel the golden beets. Cut them into small cubes.
  3. Toss the beets and garlic cloves with olive oil, salt, and pepper. Spread them on a baking sheet.
  4. Roast in the oven for 30-35 minutes, or until the beets are tender.
  5. In a large pot, sauté the chopped onion in olive oil until translucent.
  6. Add the roasted beets, garlic, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  8. Return the soup to the pot and stir in the coconut milk and lemon juice. Heat gently until hot.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with fresh dill.
