  2. Wash and trim the golden beets, then wrap them in aluminum foil.
  3. Place the wrapped beets on a baking sheet and roast for about 40 minutes, or until tender.
  4. Remove the beets from the oven and let them cool.
  5. Once cooled, peel the beets and cut them into thin slices.
  6. In a large bowl, combine the sliced beets, arugula, crumbled goat cheese, and chopped walnuts.
  7. In a small bowl, whisk together the honey, lemon juice, olive oil, salt, and black pepper to make the dressing.
  8. Drizzle the dressing over the salad and toss gently to combine.
