  1. Peel and chop the butternut squash, carrots, onion, and garlic.
  2. Heat olive oil in a large pot over medium heat. Add the chopped vegetables and sauté for 5 minutes.
  3. Add vegetable broth, ground cumin, ground turmeric, ground cinnamon, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Stir in coconut milk and heat for an additional 5 minutes.
  6. Serve the soup hot, garnished with fresh cilantro and pumpkin seeds.
