Cut the cauliflower into small florets.

In a bowl, mix all-purpose flour, cornstarch, ginger, garlic, green chilies, soy sauce, tomato ketchup, vinegar, water, and salt to make a batter.

Dip the cauliflower florets into the batter and coat them evenly.

Heat oil in a pan and deep fry the coated cauliflower florets until golden brown.

Remove the fried cauliflower and place them on a paper towel to remove excess oil.

In a separate pan, heat 1 tablespoon of oil and sauté ginger, garlic, and green chilies.

Add soy sauce, tomato ketchup, and vinegar. Mix well.

Add the fried cauliflower florets to the pan and toss them in the sauce.

Cook for 2-3 minutes until the florets are coated well.

Serve hot and garnish with spring onions (optional).
