Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

In a mixing bowl, combine almond flour, coconut flour, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until a dough forms.

Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use a star-shaped cookie cutter to cut out cookies.

Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until golden brown around the edges.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool completely.
