Gingered Carrots

Peel and slice the carrots into thin strips.

Heat vegetable oil in a wok or large skillet over medium-high heat.

Add the sliced carrots and stir-fry for 3-4 minutes until slightly tender.

Grate the fresh ginger and mince the garlic cloves.

Add the ginger and garlic to the wok and stir-fry for another 2 minutes.

In a small bowl, mix together soy sauce, honey, salt, and black pepper.

Pour the sauce over the carrots and stir-fry for an additional 2 minutes.

Remove from heat and let it rest for 5 minutes.
