Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  2. In a separate bowl, cream together the vegan butter and granulated sugar until light and fluffy. Add the flaxseed meal mixed with water and vanilla extract. Mix until well combined.
  3. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Fold in the vegan chocolate chips.
  4. Divide the dough into 12 equal portions and roll each portion into a ball. Place the balls on a baking sheet lined with parchment paper.
  5. Flatten each ball slightly with the palm of your hand. Use a toothpick or a small knife to create ghost-like shapes on the cookies.
  6. Bake for 10-12 minutes or until the edges are set. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  7. In a small bowl, mix the powdered sugar with a few drops of water until you achieve a thick glaze consistency. Add black gel food coloring and mix well.
  8. Transfer the glaze to a piping bag or a small plastic bag with a corner snipped off. Pipe ghostly faces onto the cookies.
  9. Allow the glaze to set for 30 minutes before serving.
