  1. Rinse the black-eyed beans and soak them in water overnight.
  2. Drain the soaked beans and add them to a large pot.
  3. Add water and bring to a boil. Cook for 30 minutes or until the beans are tender.
  4. Rinse the rice and add it to the pot with the cooked beans.
  5. In a separate pan, heat the red palm oil and sauté the onions, garlic, and ginger until fragrant.
  6. Add the tomato paste, bay leaves, thyme, and salt to the pan and cook for 2 minutes.
  7. Pour the tomato mixture into the pot with the beans and rice.
  8. Stir well and bring to a simmer. Cover and cook for 15-20 minutes or until the rice is cooked.
  9. Remove from heat and let it rest for 10 minutes.
  10. Serve hot with your favorite side dishes.
