Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.

Add the sliced zucchini and cook for another 5 minutes, stirring occasionally.

Pour in the vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the zucchini is tender.

Remove the pot from heat and let it cool slightly.

Using an immersion blender or regular blender, blend the soup until smooth.

Return the soup to the pot and reheat if necessary.

Serve hot, garnished with fresh basil and a dollop of Greek yogurt if desired.
