Gatte Ki Subji
Gatte Ki Subji is a popular dish from the state of Rajasthan in India. It is made with gram flour dumplings cooked in a spicy yogurt-based gravy.

In a mixing bowl, combine besan, curd, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, asafoetida, salt, and 1 tablespoon of oil. Mix well to form a smooth dough.

Divide the dough into small cylindrical shapes (gatte).

Boil water in a pan and add the gatte. Cook for 10-12 minutes or until they float to the surface.

Remove the gatte from water and let them cool. Cut them into small pieces.

Heat 1 tablespoon of oil in a pan and fry the gatte until golden brown.

In the same pan, add ginger-garlic paste and sauté for a minute.

Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.

Add water and cook for 2-3 minutes.

Add the fried gatte and cook for another 5 minutes.

Garnish with fresh coriander leaves and serve hot with roti or rice.
