Garlicky Spaghetti Squash
Spaghetti squash gets its name from its unique stringy texture, which resembles spaghetti noodles when cooked.

Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds.

Drizzle olive oil over the cut sides of the squash and season with salt and black pepper.

Place the squash halves cut-side down on a baking sheet and roast for 40-45 minutes, or until the flesh is tender.

While the squash is roasting, mince the garlic and chop the fresh parsley.

In a pan, heat olive oil over medium heat and sauté the minced garlic until fragrant.

Once the squash is cooked, use a fork to scrape the flesh into spaghetti-like strands.

Add the spaghetti squash strands to the pan with garlic and toss to coat.

Cook for an additional 2-3 minutes, until heated through.
