Garlic, Spinach, and Chickpea Soup
Chickpeas, also known as garbanzo beans, are a great source of plant-based protein and fiber.

Heat olive oil in a large pot over medium heat. Add the onion, carrot, and celery, and cook until softened, about 5 minutes.

Add the garlic and dried thyme, and cook for an additional 1 minute.

Add the vegetable broth, chickpeas, and dried thyme. Bring to a boil, then reduce heat and simmer for 15 minutes.

Stir in the spinach and cook until wilted, about 2 minutes.

Remove from heat and let the soup rest for 5 minutes.

Stir in the lemon juice and season with salt and black pepper to taste.
