  2. Add the garlic and dried thyme, and cook for an additional 1 minute.
  3. Add the vegetable broth, chickpeas, and dried thyme. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Stir in the spinach and cook until wilted, about 2 minutes.
  5. Remove from heat and let the soup rest for 5 minutes.
  6. Stir in the lemon juice and season with salt and black pepper to taste.
  7. Serve hot and enjoy!
