Preheat the oven to 425°F (220°C).

Slice the potatoes thinly, leaving the bottom intact.

Place the potatoes on a baking sheet lined with parchment paper.

In a small bowl, mix together the olive oil, minced garlic, chopped herbs, salt, and black pepper.

Brush the seasoned oil mixture over the potatoes, making sure to get in between the slices.

Bake the potatoes for 45-50 minutes, until golden and crispy.

Remove from the oven and let rest for 5 minutes before serving.
