Peel and slice the carrots into sticks.

In a bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper.

Spread the carrots in a single layer on a baking sheet.

Roast in the preheated oven for 20 minutes, or until the carrots are tender and slightly caramelized.
