  2. In a pot, add the rice and water in a 1:2 ratio. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. While the rice is cooking, mince the garlic and ginger.
  4. Heat the vegetable oil in a pan over medium heat. Add the minced garlic and ginger and sauté until fragrant.
  5. Add the cooked rice to the pan and stir-fry for 2-3 minutes.
  6. Add soy sauce and salt, and continue stirring for another 2 minutes.
  7. Garnish with chopped spring onions.
  8. Let the rice rest for 5 minutes before serving.
