Tomatoes are technically a fruit, but they are commonly used as a vegetable in cooking.

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until onions are translucent.
  2. Add tomatoes and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Remove from heat and let cool slightly. Use an immersion blender or a regular blender to blend the soup until smooth.
  4. Return the soup to the pot and reheat over low heat. Season with salt and black pepper.
  5. Serve hot, garnished with fresh basil leaves.
