Fried Sunchoke Chips with Rosemary Salt
Sunchokes, also known as Jerusalem artichokes, are not actually artichokes nor are they from Jerusalem. They are a type of sunflower root vegetable with a nutty flavor.

Fried Sunchoke Chips with Rosemary Salt

Wash and scrub the sunchokes, then slice them into thin chips.

Heat vegetable oil in a deep pan or fryer.

Fry the sunchoke chips in batches until golden brown and crispy.

Remove the chips from the oil and drain on a paper towel.

In a small bowl, mix rosemary and salt to make the rosemary salt.

Sprinkle the rosemary salt over the fried sunchoke chips.
