Preheat the oven to 180°C (350°F).

In a food processor, combine chickpeas, red bell pepper, red onion, fresh parsley, lemon juice, olive oil, salt, and black pepper. Pulse until well combined.

Slice the mini burger buns in half horizontally. Spread the chickpea mixture on the bottom half of each bun.

Place the top half of the buns on the chickpea mixture.

Place the mini smackers on a baking sheet and bake for 10 minutes, or until the buns are slightly toasted.
