Fruit bars have been enjoyed for centuries and are believed to have originated in ancient Egypt.

  1. Preheat the oven to 350°F (175°C). In a large mixing bowl, combine oats, almond flour, coconut oil, maple syrup, and vanilla extract. Mix well until the mixture resembles a crumbly dough.
  2. Press half of the dough into the bottom of a greased baking dish to form the crust.
  3. In a separate bowl, combine the fresh mixed berries, pineapple chunks, mango chunks, and kiwi slices. Toss gently to mix.
  4. Spread the fruit mixture evenly over the crust.
  5. Sprinkle the remaining dough over the top of the fruit.
  6. Bake in the preheated oven for 30 minutes, or until the top is golden brown.
  7. Remove from the oven and let it cool for 1 hour.
  8. Cut into bars and garnish with fresh mint leaves.
  9. Serve and enjoy!
