  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrot, celery, and red bell pepper. Cook until vegetables are tender, about 5 minutes.
  3. Stir in tomato paste, thyme, basil, oregano, bay leaf, salt, and black pepper. Cook for 2 minutes.
  4. Add white beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Remove bay leaf and discard.
  6. Use an immersion blender to blend the soup until smooth, or transfer to a blender and blend in batches.
  7. Return the soup to the pot and heat over low heat for 5 minutes.
  8. Serve hot, garnished with fresh parsley.
