French Quarter Bean Soup

Heat olive oil in a large pot over medium heat.

Add onion, garlic, carrot, celery, and red bell pepper. Cook until vegetables are tender, about 5 minutes.

Stir in tomato paste, thyme, basil, oregano, bay leaf, salt, and black pepper. Cook for 2 minutes.

Add white beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.

Remove bay leaf and discard.

Use an immersion blender to blend the soup until smooth, or transfer to a blender and blend in batches.

Return the soup to the pot and heat over low heat for 5 minutes.

Serve hot, garnished with fresh parsley.
