French Canadian Pea Soup
French Canadian Pea Soup, also known as ‘Soupe aux pois’, is a traditional dish in Quebec and is often served during the winter carnival known as ‘Carnaval de Quebec’. It is a hearty and comforting soup that has been enjoyed by generations.

Rinse the dried split peas and set aside.

In a large pot, sauté the onion, carrot, celery, and garlic until softened.

Add the bay leaves, thyme, vegetable broth, salt, pepper, smoked ham hock, and water to the pot.

Bring to a boil, then reduce heat and simmer for 40 minutes, or until the peas are tender.

Remove the ham hock from the pot and shred the meat.

Return the shredded meat to the pot and discard the bone.
