  1. Soak the chestnuts in hot water for 10 minutes, then peel and chop them.
  2. Rinse the rice under cold water until the water runs clear.
  3. In an earthenware pot, heat the vegetable oil over medium heat.
  4. Add the garlic, ginger, and spring onions and stir-fry for 1 minute.
  5. Add the chopped chestnuts and stir-fry for another 2 minutes.
  6. Add the rice and stir-fry for 2 minutes.
  7. Add the vegetable broth, soy sauce, salt, and black pepper.
  8. Bring to a boil, then reduce the heat to low and cover the pot.
  9. Simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  10. Remove from heat and let it rest for 10 minutes.
  11. Fluff the rice with a fork before serving.
