Granola was invented in the late 19th century by Dr. James Caleb Jackson as a health food for his patients.
This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 325°F (165°C).

In a large bowl, combine the rolled oats, almonds, pecans, pumpkin seeds, dried cranberries, cinnamon, and salt.

In a small saucepan, heat the maple syrup, coconut oil, and vanilla extract over low heat until melted and well combined.

Pour the liquid mixture over the dry ingredients and mix until everything is well coated.

Spread the mixture evenly onto a baking sheet lined with parchment paper.

Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crispy.

Remove from the oven and let it cool completely on the baking sheet.

Once cooled, break the granola into small clusters.

Store in an airtight container for up to 2 weeks.
