Quinoa is actually a seed, not a grain, and it is considered a complete protein source.
This is vegan and gluten free recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Rinse quinoa under cold water.

In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.

In a separate pan, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.

Add carrot and bell pepper, cook for 5 minutes.

Add peas, dried herbs, salt, and black pepper. Cook for another 2 minutes.

Once quinoa is cooked, fluff it with a fork and add it to the vegetable mixture. Stir well.

Remove from heat and stir in lemon juice and fresh parsley.

Let the pilaf rest for 5 minutes before serving.
