  1. Rinse quinoa under cold water.
  2. In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. In a separate pan, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  4. Add carrot and bell pepper, cook for 5 minutes.
  5. Add peas, dried herbs, salt, and black pepper. Cook for another 2 minutes.
  6. Once quinoa is cooked, fluff it with a fork and add it to the vegetable mixture. Stir well.
  7. Remove from heat and stir in lemon juice and fresh parsley.
  8. Let the pilaf rest for 5 minutes before serving.
  9. Serve hot and enjoy!
