Yellow rice, also known as Spanish rice or arroz amarillo, is a popular dish in many Latin American and Spanish cuisines. It gets its vibrant yellow color from the addition of turmeric or saffron.

  1. Rinse the rice under cold water and set aside.
  2. Heat olive oil in a large saucepan over medium heat.
  3. Add the onion and garlic, and sauté until softened.
  4. Stir in the turmeric, cumin, and salt.
  5. Add the rice and stir to coat.
  6. Pour in the vegetable broth and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 15 minutes.
  8. Stir in the frozen peas and cook for an additional 5 minutes.
  9. Remove from heat and let it rest for 5 minutes.
  10. Fluff the rice with a fork and stir in the lemon juice and fresh parsley.
  11. Serve hot.
