  1. Cut the zucchini into thin matchstick-sized strips.
  2. Heat sesame oil in a pan over medium heat.
  3. Add minced garlic and stir-fry for 1 minute.
  4. Add the zucchini strips and stir-fry for 2-3 minutes until they are slightly softened.
  5. Remove from heat and let it cool slightly.
  6. In a small bowl, mix soy sauce and sesame seeds.
  7. Pour the sauce over the cooked zucchini and toss well.
  8. Garnish with chopped green onions.
