Easy Pumpkin Pudding or Pie
Pumpkins are not only great for carving during Halloween, but they also make delicious desserts like pumpkin pudding and pie!
This is vegan and gluten free recipe. Dish can be prepared in 135 minutes. Even a beginner can handle preparing this dish. Number of ingredients: 8.

Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the pumpkin puree, coconut milk, maple syrup, pumpkin pie spice, vanilla extract, cornstarch, and salt. Mix well until smooth.

If making pie, roll out the pie crust and place it in a pie dish. Pour the pumpkin mixture into the pie crust.

If making pudding, pour the pumpkin mixture into a greased baking dish.

Bake in the preheated oven for 45-50 minutes for the pie or 30-35 minutes for the pudding, or until the center is set.

Remove from the oven and let it cool for 60 minutes.

If making pie, refrigerate for an additional 4-6 hours or overnight before serving.
