Rinse the rice under cold water until the water runs clear.

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

Add the turmeric powder, cumin powder, salt, and black pepper to the saucepan. Stir well to combine.

Add the rinsed rice to the saucepan and stir to coat the rice with the spices.

Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low and cover the saucepan with a lid.

Simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.

Remove the saucepan from heat and let it rest, covered, for 5 minutes.

Fluff the rice with a fork and garnish with chopped parsley before serving.
