  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the onion, carrot, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
  3. Add the lentils, vegetable broth, tomato paste, bay leaves, dried thyme, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the lentils are cooked through.
  4. Remove the bay leaves and discard. Serve the soup hot, garnished with fresh parsley.
