Deliciously simple veggie burgers
Veggie burgers have been around since ancient times, with records of vegetarian patties made from beans and grains dating back to the Roman Empire.

Drain and rinse the chickpeas.

In a food processor, combine the chickpeas, red onion, garlic cloves, fresh parsley, ground cumin, ground coriander, salt, black pepper, lemon juice, and olive oil.

Pulse until the mixture is well combined but still slightly chunky.

Transfer the mixture to a bowl and stir in the breadcrumbs.

Shape the mixture into patties and refrigerate for 5 minutes to firm up.

Heat a grill or pan over medium heat and cook the patties for 4-5 minutes on each side, or until golden brown and heated through.

Toast the hamburger buns and assemble the burgers with lettuce, tomato, red onion, mayonnaise, and ketchup.
