Mapo Tofu is a popular Sichuan dish known for its spicy and numbing flavor. It was named after a pockmarked (mapo) woman who created the dish in Chengdu, China.

  1. Cut the tofu into small cubes and set aside.
  2. Heat oil in a wok or pan over medium heat. Add the ground pork and cook until browned.
  3. Add the garlic, ginger, Sichuan peppercorns, chili bean paste, and fermented black beans. Stir-fry for a minute until fragrant.
  4. Add the tofu and stir gently to combine.
  5. In a separate bowl, mix together the soy sauce, sesame oil, cornstarch, and water. Pour the mixture into the wok and stir gently.
  6. Cook for another 5 minutes until the sauce thickens.
  7. Garnish with chopped green onions and serve hot with rice.
