Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 15 minutes.

Heat oil in a pan and add mustard seeds. Once they start to splutter, add urad dal, chana dal, cashew nuts, and curry leaves. Sauté until the dals turn golden brown.

Add chopped green chilies and ginger. Sauté for a minute.

Drain the soaked rice and add it to the pan. Stir well to combine with the tempering.

Add turmeric powder and salt. Mix well.

Pour water into the pan and bring it to a boil. Reduce the heat, cover the pan, and let it simmer for about 15-20 minutes, or until the rice is cooked and all the water is absorbed.

Remove the pan from heat and let the rice rest for 5 minutes.

Fluff the rice with a fork and serve hot.
