Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until softened.

Add curry powder, salt, and black pepper. Stir well to combine.

Add diced pumpkin and cook for 5 minutes, stirring occasionally.

Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes or until the pumpkin is tender.

Remove from heat and let the mixture cool slightly.

Use an immersion blender or transfer the mixture to a blender to puree until smooth.

Return the pureed soup to the pot, add coconut milk, and heat over low heat until warmed through.
