Curried Lentil Soup
Lentils are one of the oldest cultivated crops and have been a staple food in many cultures for centuries. They are highly nutritious and a great source of plant-based protein.

In a large pot, sauté the diced onion, minced garlic, and grated ginger until fragrant and softened.

Add the sliced carrots and cook for a few more minutes.

Stir in the curry powder and cumin, and cook for another minute.

Add the red lentils, chopped tomatoes, and vegetable stock. Bring to a boil, then reduce heat and let simmer for about 20 minutes or until the lentils are tender.

Stir in the coconut milk and lemon juice, then season with salt and black pepper to taste.

Let the soup rest for 10 minutes to allow the flavors to blend.

Serve hot, garnished with fresh cilantro.
