Cook the lentils according to package instructions. Drain and set aside.

Chop the bell pepper, red onion, cucumber, cherry tomatoes, and fresh coriander.

In a large mixing bowl, combine the cooked lentils, chopped vegetables, lime juice, olive oil, curry powder, and salt.

Mix well to combine all the ingredients.

Cover and let the salad rest in the refrigerator for at least 10 minutes.
