Curried Cauliflower over Fragrant East Indian Basmati Rice

Rinse the cauliflower florets and set aside. Cook the basmati rice according to package instructions and keep warm.

Heat oil in a large pan over medium heat. Add chopped onion, garlic, and ginger. Sauté until golden brown.

Add the cauliflower florets to the pan and stir well. Cook for 5 minutes.

Add chopped tomatoes, curry powder, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.

Pour coconut milk and water into the pan. Stir well, cover, and simmer for about 15 minutes or until the cauliflower is tender.

Stir in garam masala powder and fresh cilantro. Cook for another 1-2 minutes.
