Cook the pasta according to package instructions. Drain and set aside.

In a large pan, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until fragrant and golden brown.

Add the blended tomatoes, basil, oregano, salt, and black pepper to the pan. Simmer for 10 minutes.

Add the mixed vegetables to the pan and cook for an additional 5 minutes, or until the vegetables are tender.
