Heat oil in a large pot over medium heat. Add onions, garlic, and ginger. Cook until onions are translucent.

Add curry powder and cook for another minute.

Add carrots and vegetable stock. Bring to a boil, then reduce heat and simmer until carrots are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in coconut milk, lime juice, salt, and black pepper. Cook for another 5 minutes.

Serve hot and garnish with fresh herbs if desired.
